Sara Kate on: The Best Peach Cobbler (Ever!)

Since both my mom and sister have shared a few of their favorite recipes with you earlier this week, I wanted to share with you one thing they missed… DESSERT! The peach cobbler recipe from the Happy Everything Cookbook is one of my all-time favorites, and is so easy to make! Not to brag, but I even brought it to a housewarming party this summer and got quite a few compliments on it. The wavy edge our ruffle pie dish gives the cobbler the perfect finishing touch, without having to do anything! Top off that open bottle of wine and cheers to happy baking!

What you’ll need:

2 cups fresh peaches {approx. 4 peaches}, peeled & sliced

1 tablespoon sugar

16 tablespoons {2 sticks} butter

2 cups sugar

2 cups self-rising flour, sifted

2 cups white wine

Vanilla ice cream or whipped cream, to serve


1.Preheat oven to 250 degrees and arrange oven rack to middle position.

2.In a small bowl, toss peaches with 1 tablespoon of sugar and set aside.

3.Place butter in 9x13 inch baking dish, and put dish in oven until butter is melted.

4.In a large bowl, whisk sugar, flour and wine until smooth.

5.Remove dish from oven and pour batter over the butter; do not stir

6.Using fingers or slotted spoon, drop the sweetened fruit over the batter. Discard extra juice.

7.Return baking dish to oven and bake for 40-45 minutes, or until the center is set and the cobbler is bubbly and golden.
