Growing up in Miami, we were always looking for a reprieve from the sun. This cool tomato cucumber salad is one recipe straight from the garden that is sure to please. Lucky for me, my tomatoes and basil are actually growing this year. A quick trip to the farmers market and a couple pantry staples later and I’ve got a bright and delicious salad. Try adding it to your next summer barbecue!

Tomato Cucumber Salad from the Happy Everything! Cookbook

Here's what you'll need:

1 pound assorted tomatoes, cut into wedges

¼ teaspoon salt

1 tablespoon basil or parsley, chopped

2 large cucumbers, peeled and chopped

1 large sweet onion, thinly sliced

2 tablespoons olive oil

½ cup white wine vinegar

1 tablespoon sugar

¼ teaspoon salt

¼ teaspoon fine black pepper

Combine the cut tomatoes, cucumber, and onions with salt, herbs {I use basil} and olive oil and set aside.

In a small bowl, combine vinegar, sugar, salt and pepper. Pour vinegar mixture over salad and toss.
