George Washington was born on this day, February 22, maaaany years ago in 1732.  His birthday was celebrated yesterday along with Abraham Lincoln’s on the federal holiday known as President’s Day.  In honor of old Georgie Porgie and his cherry tree we wanted to share a yummy recipe for mini cherry pie danish.

As they say, it’s as EASY as pie!

YOU’LL NEED: Ready made Puff Pastry (1 sheet) Cherry pie filling (1 large can) Cream cheese mixture: Half block of cream cheese (4oz) 1 Tbs sugar vanilla extract (few drops) lemon juice (just a splash) Drizzle icing: 1 cup of powdered sugar 2-3 tsp orange juice or until you get the right consistency

Step 1: Cut one sheet of thawed pastry into 9 squares

Step 2: Soften the cream cheese in the microwave for 10 seconds and mix in the sugar, vanilla, and lemon juice

Step 3: Spread the cream cheese mixture diagonally on each square

Step 4: Add a few cherries to each square on top of the cream cheese

Step 5: Pull the opposite corners up on each square and pinch them together

Step 6: Brush each danish with a bit of egg wash and bake at 400-425 until golden brown {about 15 minutes}

Step 7: Let them cool slightly before drizzling with icing

Step 8: ENJOY!!
