Our Favorite Little Fishy

One of the best things about the Gulf beaches surrounding Tallahassee is their lack of commercialism. No condos, crowds or tourists, just quaint beach life, fishing and fun. Many Coton Colors team members welcome summer with a relaxing trip to the shore over the Memorial Day weekend… The waves and sand just beckon, and we can’t wait to see what’s nibbling on the end of our line while we soak up the sun. But as many have learned, the trek is best enjoyed when you don’t forget to pack the cooler with staples {grocery stores are few and far between}. Our favorite little fishy for the trip: Smoked Fish Dip from The Happy Everything Cookbook. Simple to make yet addictive to eat, this coastal-friendly finger food can be made ahead of time and served with saltine crackers. Just don’t forget the beer to wash it down.

Smoked Fish Dip
Serves 8-10, Yields 2 cups

  • 1 cup smoked fish
  • ¾ mayonnaise
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons celery, minced
  • ¼ cup sweet onion, grated
  • 1 tablespoon fresh lemon juice
  • ⅛ teaspoon garlic powder
  • Salt & pepper, to taste
  • Saltine crackers

In a medium bowl, mix all ingredients together. Season to taste with salt and pepper. Serve with saltine crackers. For a low-carb alternative, serve with carrot or celery sticks.

Note: Any smoked fish will work! Just shop a local seafood market or gourmet grocer and select the smoked fish of your choice. Mullet, salmon, tuna, amberjack… Try whatever is local to enjoy the best flavor.
